No-Bake Apricot Almond Granola Bars

These no-bake granola bars take less than 5 minutes to put together and require only a few ingredients, many of which you probably already have on hand.  The combination of apricots and almonds paired with salty almond butter is fantastic.  I like to keep them individually wrapped and stored in my freezer for a quick grab-and-go snack or pre-workout fuel.

No-Bake Almond Apricot Granola Bars 

Ingredients:

  • 1/2 C Almond Butter
  • 1/2 C Honey
  • 1 C Crispy Brown Rice Cereal
  • 1 C Plain Jane Nuts About Granola
  • 1/2 C Almonds, chopped
  • 1/2 C Dried Apricots, chopped
  • 2 t Chia Seeds
  • 1/4 t Salt
Directions:
  1. Put almond butter and honey in a small microwaveable dish and heat for 30 seconds.  Whisk together and set aside.
  2. Put cereal, granola, almonds, apricots, almonds, salt and chia in a large bowl and add wet mixture.
  3. Grease a 7-8 in. square baking dish and line with plastic wrap.  Spread granola mixture evenly. Cover, refrigerate until set, at least one hour.
Makes 16-20 bars

  5. I’ve been wanting to try the Plain Jane granola since you first mentioned it in SWYNTS. I tried making my own peanut butter granola but I’m sure it doesn’t measure up to the Nuts About Granola brand.
