Pumpkin Pie Parfait

You don’t even need to turn on the oven!

Ingredients:
1 cup 0% fat, organic vanilla yogurt
1/4 cup fresh pumpkin puree
1 tsp. pumpkin pie spice
1 small organic, fair trade banana (sliced into disks)
1/4 cup Nuts About Granola (Plain Jane)

Directions:

Combine the yogurt, pumpkin and spices and mix until well combined. In a 12oz glass cup, layer 1/2 pumpkin mixture, 1/2 banana, 1/2 pumpkin mixture, 1/2 banana and then top with the granola.

Nuts About Granola Goes to Africa

Below is a recollection of the Compassion Corps latest trip to Morocco and Liberia:

A team from Pennsylvania & Delaware traveled with Compassion Corps, a local non-profit based in Glen Mills, to the countries of Liberia and Morocco this past summer.  Their purpose in going was to do teacher training seminars and help to begin some economic development projects in Liberia and to work in orphanages and special needs centers in Morocco.

They traveled with packets of Nuts About Granola and it was a welcome treat.  Sometimes it was used for breakfast on the go when they were rushing out the door to the training seminars and other times it made a nice snack after eating so many unfamiliar foods.

Warm Peaches and Cream

It’s peach season! This is my favorite recipe for warm peaches and “cream”. It’s light, refreshing and a perfect ending to any summertime gathering.

 

Ingredients:

4 very ripe local peaches
32oz. tub of thick Plain Greek Yogurt
2 cups Jungle Fever Granola

Directions:

Peel the skin off of the peaches and slice into wedges. If the peaches are ripe enough the skin should just peel off. Heat the peaches in a medium sauce pan over medium heat until they start to bubble. Cook for about 5 minutes or until the natural juices from the peaches start to thicken. Turn off the heat and set aside to cool.

Scoop 1 cup of the yogurt into a serving bowl, pour 1/2 cup of the warm peaches over the yogurt and top with 1/4 cup granola.

Warrior Crunch Granola: Good Eats for a Good Cause

Nuts About Granola® and Cancer Warrior have teamed up to launch Warrior Crunch in an effort to raise money for cancer research. Formulated with cancer patients in mind, this energy-packed snack is full of whole grains, almonds, anti-oxidant rich cherries and dark chocolate.

Sarah Lanphier, owner of Nuts About Granola, and Heather Barley, owner of Cancer Warrior recently discovered how much they had in common; professionally and personally. Both own businesses in York and Lancaster, both were featured in the Emmy® Gift Bags last September and both have a passion for helping others.

“No cancer patient wants to be known as “the guy or gal with cancer”. They are regular people who just want to be a regular person again. Enjoying the little things in life, like a delicious breakfast, makes all the difference” Says Heather Barely.

“I, like most people, know of a loved one who has been affected by cancer. Heather came to me with the idea of teaming up to make a co-branded granola to raise money for cancer research and I didn’t even let her finish her sentence before saying yes” Says Sarah Lanphier.

Warrior Crunch will debut at the Healthy Living Summit on August 19th in Philadelphia, PA; an event that brings the top healthy-living food bloggers together under one roof to network, learn and blog about all things fresh, fun and healthy. Susan, curator of “The Great Balancing Act”, was recently diagnosed with Lymphoma. The whole blogging community is coming together to support her on her road to recovery. All of the proceeds of Warrior Crunch from August 1st to October 31st will go to Susan.

Nuts About Granola: Strawberry Rhubarb Compote

Both strawberries and rhubarb happen to be in season at the same time. I was inspired to make a strawberry rhubarb compote after tasting the new pie stand‘s strawberry rhubarb pie at the Central Market in York.

Ingredients:
1 lb. Rhubarb, cut into quarter inch pieces
20oz of strawberries, fresh or frozen
3 large Granny Smith Apples, peeled, roughly chopped
1/2 cup raw sugar
1 tsp cinnamon
1/2 tsp sea salt

Directions:

In a medium sauce pan over medium high heat, bring the strawberries and apples up to a boil. Add the rhubarb, cinnamon, salt and sugar. Boil for about 10 minutes or until it is thick. Let cool to room temperature before eating.

Serving Suggestion:

I eat mine with 1/2 cup fat free organic plain yogurt, 1/2 cup of the compote and 1/4 cup of Plain Jane granola.
