Summer is in full bloom! In my house that means lots and lots of salads. I love harvesting fresh produce from the garden and tossing the ingredients together for a fresh, crisp salad on a hot day. I do my best to eat a rainbow of colors every day and this salad is a great way to hit most every color.

This super simple salad is a mix of butter lettuce, baby romaine and red leaf lettuce, 3 sliced strawberries and a large handful of blueberries. We are fortunate that we have pick your own blueberries near our house. Check our Pick Your Own.org to see if there is a field near you!

But to give this summer fresh salad some crunch I skipped the croutons and sprinkled on a large handful of Off Road Edition granola. The mixed nuts in the granola add a bit of protein to this salad. The dried dates and dried cranberries add a different texture as well as concentrated sweetness to each bite. This entire meal is vegan. Not a vegan myself, but I am enjoying all the benefits with this meal!

Give your salad a light drizzle with your favorite dressing and you have a fabulous, fresh seasonal salad to keep you going for the rest of the day!
