Whole-Grain Granola Pancakes

Any health enthusiast will tell you that eating breakfast every day is a vital part of maintaining a healthy diet.  Often times, we spend our mornings just trying to make it out the door on time let alone think about making a fully balanced meal.  Now there are plenty of fully suitable grab-and-go breakfast options that would be just fine for these type of crazed mornings; however, today's recipe is all about comfort food and peaceful mornings. 

Whenever I think of a nice leisurely weekend morning, my mind brings me right to the idea of pancakes.  One of the things I love most about them is the fact that they are so versatile.  I've made everything from pumpkin pecan, to red velvet to carrot cake, but my most recent obsession has been granola pancakes!  Surprise!  

I'm not talking about simply adding a touch of granola on top of your stack as a nice garnish, I mean adding a generous portion of fresh granola right into the batter.  The sweet granola becomes spread throughout the fluffy cakes which adds not only wonderful flavor but an awesome texture.  So next time you grab the Bisquick, think about adding a few touches to take your average flapjack into a gourmet delicacy. 

 

Whole-Grain Granola Pancakes

Ingredients:

  • 1 1/2 cups whole wheat flour
  • 3 tablespoons sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 eggs
  • 2/3 cup plain non fat Greek yogurt
  • 3/4 cup water
  • 1/4 cup Purely Simple Nuts About Granola
  • sliced strawberries and banana (optional) 

Directions:

Heat griddle or 12 inch skillet over medium high heat. Spray with cooking spray. In a large bowl, mix flour, sugar, baking powder, baking soda and salt.  In a medium bowl, beat eggs, yogurt, and water with a whisk until well blended. Pour the egg mixture into the flour and gently combine. Fold in the granola until mixed throughout.

For each pancake, pour slightly less than 1/4 cup of batter onto hot griddle.  Cook pancakes 1 to 2 minutes or until bubbly on top.  Turn; cook 1 to 2 minutes on other side or until golden brown.

Place 2 pancakes on each serving plate. Top with sliced strawberries and banana.

Vegan Granola Pie Crust {Gluten Free}

Many people think that vegan or gluten free diets are limited when it comes to dessert.  It's true that most confections are based on dairy or wheat ingredients; however, baking to satisfy these dietary restrictions is easier than you think….it just takes a little creativity. 

This recipe is a perfect staple for many cheesecakes, pies or bars.  It uses just three ingredients which are most likely in your kitchen right now.  We suggest using our Plain Jane Gluten Free flavor to ensure that this can also be enjoyed for someone who may have a gluten intolerance.  

 

Vegan Granola Pie Crust {Gluten Free}

Ingredients: 

  • 1 1/2 cups Plain Jane GF granola
  • 1 tsp sugar
  • 1/3 cup vegan butter or margarine, melted (such as Earth Balance) 
  • water as needed

Directions:

Pre-heat oven to 350 degrees.  Process the granola in a blender or food processor until fine.  Add melted butter and sugar.  If mixture is still crumbly, add a bit of water until it's fully processed.

Gently press into a pie tin. Bake for 6-8 minutes.  

 

 

 

Chocolate Mint Cookie Brownies

Brownies are fantastic as is, but when it comes to chocolate, there really isn't such a thing as "too much."  I have always loved the combination of chocolate a mint which is why the Chocolate Mint Cookie granola has become one of my favorite flavors this season.  It makes an excellent dessert option on its own, but I've recently discovered how versatile this decedent granola can be with paired with delicious baked goods.  

This recipe is simple in preparation but complex in flavor.  The added crunch of the granola in these brownies is what makes them so unique and the chocolate mint flavor resembles the taste of soft and gooey thin mint cookie.  

 

Chocolate Mint Cookie Brownies 

Ingredients

Directions

Combine mix, yogurt, egg and melted butter in a large mixing bowl.  Gently fold in 1/4 cup of the granola. Spread the batter in a greased 13 x 9 pan and sprinkle the reserved granola on top.  Bake at 350 for 45-50 minutes. 

If you're like me and enjoy a slightly under baked brownie, take these out of the oven exactly at 45 minutes, otherwise, leave them in the extra 5 minutes.

How often do you eat granola? 

At least a handful a day! It is way too accessible. I tried to put it up high so my short little self could not reach it, but now I just resort to hopping on a chair to grab my daily handful…or five.

 

In your own words, describe your featured flavor granola.

The College Staple PB&J Granola it EXACTLY what I expected! Every bite tastes just like a peanut butter and jelly sandwich, but with the chewy granola texture I love so much. It is a perfect marriage!

 

In your opinion, what is the best way to enjoy granola?

I will often eat granola over Greek yogurt or with a protein shake because I have this mentality that I need some protein in every meal.. but if we are being honest here (and we are!) my favorite way to eat granola is in a bowl, with milk, and a spoon, of course.

St. Patrick’s Day at Central York Market

The luck o’ the Irish was in full swing this past weekend in York, PA as the city celebrated its annual St. Patrick’s Day Parade.  The Nuts About Granola team lived up to the saying, “everyone is just a little bit Irish on St. Patrick’s Day” by working the stand in complete green attire.  Instead of the usual fruit and yogurt parfaits, a green spin was put on the standard with Sarah’s own creation of the Shamrock Parfait using green yogurt and Chocolate Mint Cookie granola.

 

The parade began promptly at 1:00pm, as locals marched the streets with a record turnout of over 10,000 people.   The best part about the day was seeing all of the new faces that came out to the market and got to experience what the City of York is all about.

The Story of a Warrior {NAG Raises $500 for Cancer Relief}

 

Last summer, the blog community came together in a monumental way to help one influential blogger who had recently been diagnosed with Lymphoma.  To say that Susan is one strong woman would be an understatement.  Her story is deep, her journey was unthinkable, and yet same came out on top as she continued to inspire others through her pain.  In our eyes, that makes Susan a warrior.

When we heard about Susan's story, we knew we wanted to help.  It was also at this time last year that Nuts About Granola teamed up with Cancer Warrior, to create a line of granola that would do more than simply satisfy taste buds.

 

Warrior Crunch was developed with cancer patients in mind. This energy rich granola is full of whole grains, almonds, anti-oxidant rich cherries and dark chocolate.

 

We first unveiled this unique flavor blend as a continuation to The Great Fundraising Act, organized by Janetha. All proceeds on sales from Warrior Crunch from August 1st to October 31st would be donated directly to Susan and her relief efforts.

Word caught on and we decided to make another debut of this worthy campaign at the 2011 Healthy Living Summit in Philadelphia, providing all attendees with a sampling of Warrior Crunch in their swag bags.

After all was said and done, we are proud to say that with the tremendous help from the blogging community, we raised $500 for Susan.

Susan is an inspiration to us all and now lives cancer-free.  Making people happy with granola is what we're all about but changing lives with granola is our dream.  All it takes is one cause, one purpose and one delicious bag of baked oats.
